Hiroyuki Terada 寺田弘行, (born: January 29, 1968 (1968-01-29) [age 56]), is a Japanese sushi chef and YouTuber who runs the web-series Diaries of a Master Sushi Chef on YouTube. He specializes in American-style rolls.

Culinary Training & Experience[]

Terada first learned to cook from his father at the age of 10. From 1987 to 1989 he attended RKC Culinary School in Kōchi, Japan. He was known for his speed with the knife and attention to detail. After graduating he served under Master Chef Kondo from 1989 to 1992 at Yuzuan, a casual family restaurant in Nankoku, Kōchi Prefecture. He earned the title of master sushi chef after being promoted to head sushi chef there. He would later move to Miami and start his own restaurant, NoVe Kitchen and Bar. NoVe permanently closed in 2017.

Channel[]

Hiroyuki started his Diaries of a Master Sushi Chef channel in October 24, 2011. His channel has multiple segments such as Will it Sushi? where he turned a Big Mac and donuts from Dunkin' Donuts into sushi. He also teaches the regular fundamentals on making sushi.

While his main channel started in 2011, Hiroyuki has been on YouTube since March 17, 2007. His old channel, which is now used as a second channel, was made to post culinary and travel vlogs.

  • He has been featured on The F Word, a cookery tv program hosted by Gordon Ramsay.
  • In 2017, he broke the Guinness World Record for most carrots sliced blindfolded in 30 seconds by slicing 88 carrots. He still holds the record to this day.
  • He is known to put graphic content warnings in the title of videos that involve live ingredients.
  • The is one of the hosts of the culinary podcast 86Media. The other host is chef Michael Collantes.
